Farmers' Market Vendor Shares Sweet Peach Pie Recipe

Susan Noffke-Ginters of Noffke Family Farms, a vendor at Evanston's Farmers' Market, shares her best peach pie recipe.

For over three decades, Michigan farmer Susan Noffke- Ginter has worked the fields at her family farm in Coloma, Mich. every Monday through Friday and trekked to Skokie's Farmers' Market every Sunday. Noffke- Ginter has sold her goods at the Skokie Farmers’ Market since its start. “I was one of the first ones in there 37 years ago,” she said.

Now her family has fourth generation farmers who come to area farmers’ markets. Noffke Farms sells at markets in Skokie, Evanston, Naperville, Lincoln Square, Northfield and Deerfield. 

At this time of year, peaches are in high demand. Noffke-Ginter said the look of the first round of peaches was less than appealing but “the flavor is there- it’s just the look.”

Noffke- Ginter makes her peaches even sweeter as she bakes pie after pie. She shared her recipe with Patch.

Noffke-Ginter recommended using this recipe for all fruit pies, specifically suggesting raspberry and blueberry.

She also gave a baking tip- she uses tapioca instead of flour because she said the flour fades the fruit’s color, while tapioca preserves its color.

Noffke Family Farms Peach Pie Recipe

  • peaches, pealed
  • ¾ cup sugar
  • ¼ cup tapioca
  • 1 tsp. almond extract
  • Let ingredients sit for few minutes
  • Stir
  • Throw it in pie shell
  • Dot the pie with butter
  • Bake at 400 for 15 minutes
  • Bake at 350 for 45 minutes
