VIDEO: Hewn Prepares Colorful Tomato Mozzarella Sandwich

At Evanston's Hewn Bakery, 810 Dempster St., intern Loudon Cohen prepares one of Hewn's sandwiches of the day: tomato mozzarella.

Hewn’s kitchen was busy Thursday morning as staff mixed Picholine-Olive Country dough, took fresh chocolate chip cookies out of the oven, cooked onions for the Carmelized Onion Rye bread and, of course, prepared fresh vegetable sandwiches for the day.

Co-owner Ellen King prepared eggplant sandwiches while Hewn’s intern Loudon Cohen, rising junior at Evanston Township High School, showed Patch how he prepares the tomato mozzarella sandwich.

He starts by spreading an almond pesto on the bread. Then he places the tomatoes, which Hewn got from the Farmers Market, on top and adds a pinch of salt to each sandwich. Next, he adds balsamic vinegar- one drop per tomato slice. He then places slices of mozzarella cheese and shredded manchego cheese on each sandwich. Finally, he tops the sandwiches with basil from the Farmers’ Market.
