Brian Huston Dishes on Upcoming Boltwood Restaurant in Evanston

Huston, formerly of Publican, and John Kim and Seth Kaplan of Brothers K, are opening Boltwood this summer.

Huston, the former chef de cuisine at Publican, and fellow Evanston residents Seth Kaplan and John Kim, owner of Brothers K Coffeehouse, are planning to open Boltwood in the former Lulu’s space this summer. Kim and Huston will be managing partners and are majority owners.

Huston explains the derivation of the restaurant’s name, which comes from the wing of ETHS named for educator Henry Boltwood.

“One of my smart-ass friends said, ‘Why don’t you call it Boltwood after this cafeteria we used to go to?’ Maybe some day the next generation will think the high school named the building after my restaurant,” Huston told Chicago Magazine.
