Hoosier Mama Pie, Dollop Coffee Opening in October

A café and pie shop is opening at 749 Chicago Ave. in Evanston, in the new AMLI apartment building.

A combination coffee shop and pie bakery is opening this October at 749 Chicago Ave., bringing together the offerings of Chicago businesses Dollop Coffee Company and Hoosier Mama Pie Company.

“Our goal is to bring pie and coffee together," Dollop Coffee Company owner Dan Weiss said in a press release. “We feel like offering them in a great environment along with some breakfast and dinner options will be a welcomed addition to Evanston."

The new café and bakery in the AMLI apartment building will offer a full espresso bar and Metropolis Coffee, as well as Hoosier Mama pies made from scratch in the store, for sale whole and by the slice. There will also be savory pies and sandwiches, according to the release.

"I began my professional career as a pastry chef at Trio in Evanston," Hoosier Mama owner Paula Haney said in the release. "I felt adopted by the town and Dan went to high school in Evanston so we both have a soft spot for the town. We feel this area is a great fit for what we want to do and the process of opening a cafe is pretty streamlined in Evanston compared to opening something comparable in the city."

The Evanston space will have a 2,500-square-foot open kitchen, vintage lights, mosaic “penny tile” and a maple counter more than 100 feet long, according to the release. Paul Leisen of leisendesign, who designed Dollop’s new Streeterville location, will also design the Evanston store.
