Hoosier Mama Pie, Dollop Coffee Opening This Week

The combination pie bakery and coffee shop will open very soon at 749 Chicago Ave. in Evanston.

Pie company Hoosier Mama and cafe Dollop Coffee are expected to open the doors to a combined bakery-coffee shop at 749 Chicago Ave. this week.

There are only a few finishing touches left on the space in the first floor of the new AMLI Evanston apartment building, according to a spokesperson for the joint venture. 

The new Evanston cafe and bakery will be the third location for Dollop Coffee Company, which started in Buena Park and recently expanded to two other cafes in Streeterville and Lake View. It is the second outpost of baker Paula Haney's Hoosier Mama Pie Company, which operates another storefront at 1618 1/2 W. Chicago Ave. 

"Paula and I love what we do. Our goal is to bring pie and coffee together," Dollop Coffee Company owner Dan Weiss said in press release. "We feel like offering them in a great environment along with some breakfast and dinner options will be a welcomed addition to Evanston."

Evanston's new coffee and pie shop will bake pies from scratch and sell them whole and by the slice, and will offer a full espresso bar, tea and Metropolis coffee. It will also serve savory pies and sandwiches. Pies during the first week will include pumpkin, apple, persimmon and pear, and apple cranberry, and the bakery has said it will start taking orders for Thanksgiving immediately after opening

Designed by Paul Leisen of leisendesign, the space features a 2,500-square-foot open kitchen visible to guests seated at a 100-foot maple counter.
